Red & Black Candy Apples

8-10 medium sized apples
8-10 wooden twigs, trimmed
3 cups granulated sugar
1/2 cup light corn syrup
1 cup of water
several drops of cinnamon flavored oil
1/4 teaspoon of red food coloring
1/4 teaspoon of black food coloring
Clean and dry the apples. Try to remove as much of the wax as possible. If you purchase them from your local farmer’s market then chances are they have not been treated with the food grade wax that makes then shine. Remove any stems or leaves and insert a twig into the end of each apple. To facilitate easier twig entry you can carefully sharpen the end of the twig or use a candy stick to create a guide hole. Set apples aside.

Heat and stir sugar, corn syrup and water in a saucepan until sugar has dissolved. Boil until the syrup reaches 300 degrees on a candy thermometer. Don’t go over 310 degrees or your candy burns and then you’ll be sad.

Remove from heat and stir in flavored oil and food coloring.

Dip one apple completely in the syrup and swirl it so that it becomes coated with the melted sugar candy. Hold the apple above the saucepan to drain off excess. Place apple, with the stick facing up, onto a baking sheet that’s greased or lined with a silpat. Repeat the process with the remaining apples. If your syrup thickens or cools too much, simply reheat briefly before proceeding. Let the apples cool completely before serving.

"A note about the black apples: Lighter colored apples (Granny Smith, Golden Delicious) work well in making the red appear bright and glassy; darker apples like red delicious help the black candy appear as dark as possible. Muy spooky!

Also, Adam made one batch with red food coloring and after he had a few red apples he reheated the candy mixture and added black food coloring. Adding black to red will make it darker. He repeated the dipping process. Black food coloring can be found online or at specialty baking stores."

TWO TALK




I think perhaps one of the best things about having a blog is exactly this... I heard from Mary Wolfe and Lisa Evans, of TWO TALK, who work with an international charity, SOS Children. The charity helps children on an impressively large scale have a secure home. In addition, SOS helps families stay together.

Each day Lisa and Mary take pictures of the moments in children's lives from simple everyday things like making cakes, playing in snow, learning to read and draw, to more dramatic moments like giving food and shelter and making new houses following natural disaster and war.

These images are captivating, real, and heartwarming. In each image there is a hint that in these lives there is a chance to heal and live happy.

When collective consciousness comes together anything is possible.

Her hand drawn silkscreen calendar is a total eco friendly creation. Hang it up for the year and then use it to dry your dishes or perhaps wrap around a wine bottle to give as a gift. Affordable and adorable. Her cards are cutie too.

Love the image from above by Hosang Park's series A Square. Shown is Bongcheon-dong. Photographs of man-made Korean parks surrounding luxury high-rise buildings.

Hsang says of his photographs:

"I find that showing the parks in this way reflects the characteristics of the Korean metropolis where I live. While a park might be associated with rest and play, these areas are increasingly used commercially as a means to boost property values. It would, after all, be hard to have discussions or take rest in such places. Likewise, for people in contemporary Korea, days are compressed in terms of time and space and taking a rest in a small downtown area doesn’t seem to have any meaning at all."

Um, yes, I need to reinterpret this. I love Heidi Klum! Found on Anahata's Blog.

"Kali Ma, called the "Dark Mother," is the Hindu goddess of creation, preservation, and destruction. She is especially known in her Destroyer aspect, squatting over her dead consort, Shiva, devouring his entrails while her yoni sexually devours his lingam, penis. Kali, in this aspect is said to be "The hungry earth, which devours its own children and fattens on their corpses…" In India the experience of the Terrible Mother has been given its most grandiose form of Kali, which just is not simple imagery; it is the image of the Feminine, particularly the Maternal, for in a profound way life and birth are integrally connected to death and destruction."

RAW CACAO LOVE


Do not knock it until you try it. These raw goodies are better than you might think. Especially the Cacao Crunch Superfood Granola. Great with fresh hemp milk. These ready made raw foods are great if you do not have the time to sprout or dehydrate although if you can make large batches of granola and cookies your bank account will not catch on fire. Buy in bulk and start making some tasty cacao cookies and tarts.

If you have not had any raw food desert my suggestion is to check out a great premiere raw food restaurant near you so you can get an idea of how amazing this foods really is and can be if you work out the kinks as with any recipes.

TO MAKE
"To make this first blend all of the room temperature ingredients in your blender first until fully blended and smooth. Then add the frozen mango and ice cubes and blend again until creamy, thick and frosty. Pour into tall serving glasses. Makes 2-3 Servings. You will need at least 1 small pineapple, 1 young coconut, and 1 bag of frozen mango for this."

1 1/2 Cups Young Coconut Water

1/2 Cup Fresh Young Coconut Meat

2 TB Coconut Oil/Butter, Virgin

1 1/2 Cups Fresh Pineapple (Chopped)

1 TB Lime Juice

1/4 Cup Agave Syrup

2 Cups Frozen Mango

1 tsp. Vanilla Extract

1 Cup Ice Cubes

INK+WIT recipes:::: RAW COCONUT VEGAN CHAI



In the midst of the cold weather chai is a great soother. Plus, if coffee make you jittery and you need a new fix try a raw coconut chai. It can be made more thick like a shake or thinned out more like a tea. I have been drinking these all week and they are delicious. I created the recipe below. Enjoy.

TO MAKE (1 8oz serving / thin with more coconut water to increase servings)
* VitaMix (necessary)

• 1 large Young Thai coconut -- (cut open)
• strain the water in a large bowl
• use 3/4 cup of the water (if the coco meat is thick and fresh you may need more water)
• pour water and coconut meat into VitaMix
• 1/2 tspn fresh ground nutmeg
• 1 tspn fresh ground ginger
• 1/2 tspn cinnamon
• 3 pinches cloves
• 1 tbspn Agave Nectar
(you can play with how rich in spice you want it - just add more)

- blend on full speed in VitaMix for at least 30 seconds. Then at medium speed for another 30 seconds.

- serve room temp or slightly chilled (do not heat)
- best if drank right away or within the day (store in fridge)

ALMOND BATH


Soak your nuts much?
Seriously, sprouted almonds are the best. Easier to digest and have a lot of protein. Almonds can often be difficult for many people to digest because of an enzyme-inhibiting substance in their skin. Soaking or sprouting removes this inhibitor so that the enzymes secreted during digestion can do their job.

Be sure to get organic raw unsalted almonds. Better deal price wise in bulk. If you cannot get organic be sure to get them raw and unsalted.

TO SOAK
3 or 4 cups almonds
cover with lukewarm purified water in a glass or stainless steel container
make sure bowl is large since the nuts will swell and grow in size
cover the almonds with a little extra water
soak overnight for at least 12 hours
drain with cold water (do not walk away / peel immediately)
the cold water will enable you to slide and remove the skins (the skin is now toxic)
while you remove the skins meditate / it takes a while
store in the fridge for up to 2-3 days (eat them relatively soon)

Almonds combine well with avocado. Throw them in a salad.
